Mini Protein Pancake Bites (Using Pancake Mix)

These pancake bites are tender, delicious, and wholesome. My kids gobble them up without syrup!

You can use any “just add water” pancake mix instead of the Kodiak Cakes Flapjack Mix, but it will change the nutritional information.

I love that these pancake bites are quick, easy, portable, and freezer-friendly. Each serving has over 10 grams of protein and 2.5 grams of fiber. They aren’t quite as soft as ones made with white flour. These have more of the consistency of a buckwheat pancake. Yum!

You can dip them in syrup for a sweet and traditional pancake taste, but we don’t usually bother with that. Sticky syrup usually results in tears at my house. My kids are weird.

Ingredients, Toppings, Variations, and Equipment

Kodiak power cakes flapjack and waffle mix, milk, an egg, melted butter, sugar, brown sugar, cinnamon, strawberry jam, mini chocolate chips, and fresh blueberries for making pancake bites.

Kodiak Cakes Buttermilk Flapjack and Waffle Mix is the base. I like that this mix uses wholesome ingredients and contains a lot of protein and fiber.

A spoonful of sugar makes the pancake bites sweet and tender. It can be left out to lower the sugar content. I like to add a hint of sweetness so we don’t feel like the bites need to be dipped in syrup. It makes them a great on-the-go treat or a less messy snack for toddlers and little kids.

An Egg makes the pancake bites richer and adds protein and nutrients.

Whole Milk adds even more protein to these pancake bites. It also improves the flavor and texture, compared to water as the liquid.

Melted Butter makes the pancake bites tender and cakey. It also adds flavor. I’ve made these with and without adding butter. It makes them better!

  • Cinnamon and Brown Sugar
  • Berry Jam or Preserves

Variations

Change the pancake mix: You can use any “just add water” pancake mix instead of the Kodiak Cakes Flapjack Mix. Changing the mix will change the nutritional information.

Add sugar: Add 1 tablespoon of sugar to the batter. It will lightly sweeten the pancake bites and make them more tender.

Special Equipment

You will need a mini-muffin pan to make these pancake bites.

Instructions

Preheat the oven to 350℉ and lightly grease a 24-count mini muffin pan.

Whisk the milk, egg, melted butter, and sugar together until smooth.

Add the dry mix to a separate mixing bowl and create a well in the center.

Pour the milk mixture into the dry mix and stir until just incorporated. Don’t over stir. It’s ok if there are lumps.

Divide the batter equally among the 24 cups. Add toppings if desired. Then, bake at 350℉ for about 12 minutes, until a toothpick inserted into the center of a pancake bite comes out clean.

Remove from the oven and serve warm, with syrup if desired. If you plan to save them for later, remove them from the pan and cool on a cooling rack.

How to Store, Reheat, and Freeze

Storage

Keep them in the fridge in a sealed container for up to 3 days or freeze them for up to 3 months.

Freezing

Place the pancake bites in a single layer on a baking sheet lined with wax paper or parchment paper. Once frozen solid, put them in a freezer bag or sealable freezer-safe container and freeze for up to 3 months.

Reheating from Frozen

In the Microwave: Microwave in 20-second intervals until warm. Do not overheat.

In the Oven: Place on a baking sheet and heat in a preheated 350℉ oven for 5-8 minutes, until warm.

Meal Prep and Batching

One batch fills a 24-count mini muffin pan. Double the batch if you have 2 mini muffin pans. If you only have 1 pan, make 2 separate batches.

Make several batches on baking day and follow the freezer instructions. These pancake bites are a great make-ahead option for easy breakfasts, snacks, and packed lunches!

Serving Tips

Serve these for breakfast

I like to include fresh fruit and eggs for a complete breakfast. You can serve them with maple syrup if you like.

Or serve them with a smoothie. They pair well with a pink yogurt smoothie, a banana berry smoothie, or a tropical green smoothie.

Serve them as snacks

I like to give these to my little kid and toddler. They make a great alternative to those little mini muffin packs.

Make batch as meal prep

They are freezable and great for prepping for a new baby. They make great back-to-school breakfast and snack options. You can also keep them on hand to add to packed lunches for kids.

  • 3/4 cup whole milk
  • 1 egg
  • 1 tablespoon melted butter or vegetable oil
  • 1 tablespoon sugar
  • 1 cup Kodiak Cakes Buttermilk Flapjack and Waffle Mix*

Optional toppings (choose 1 or mix and match)

  • 1/2 cup blueberries
  • 1/2 cup mini chocolate chips
  • 1/4 cup brown sugar mixed with 1/2 teaspoon cinnamon
  • 1/2 cup strawberry or raspberry preserves

Instructions

Preheat the oven to 350℉.

  1. Lightly grease a 24-count mini muffin pan. Or, use a silicone mini muffin pan placed on a sheet pan.
  2. Measure the milk into a measuring cup, crack the egg into the milk, pour in the melted butter, add the sugar, and whisk until smooth.
  3. Add the dry flapjack mix to a mixing bowl and form a well into the center.
  4. Pour the milk and egg mixture slowly into the well and mix to combine. Do not overmix.
  5. Spoon the mixture into the prepared mini muffin pan.
  6. Sprinkle toppings on each pancake bite if desired.
  7. Bake at 350℉ for about 12 minutes, until a knife or toothpick inserted into the center of a pancake bite comes out clean.
  8. Remove from the oven and serve warm, with syrup if desired. If you plan to save them for later, remove them from the pan and cool on a cooling rack.

      This recipe absolutely uses Kodiak mix as a starting point. No secret there. That’s the beauty of having a few easy recipes up your sleeve that use box mix!
