Easy Harvest Apple Salad with Dried Apples

This easy weeknight harvest apple salad combines tender mixed greens with crispy apple cinnamon chips, crunchy pecans, cheddar cheese, and a super easy fall apple cider salad dressing.
Pair it with protein for a complete meal, or serve it on the side with your favorite fall dinner!
This crunchy apple chip salad was inspired by one of the salad kits at Trader Joe’s. But I have to drive over 2 hours to get to a Trader Joe’s now, so I never go there.
But I do have a soft spot for those salad kits. It’s so nice to have fresh veggies on the table without chopping. Or thinking.
This isn’t quite a salad kit, but it’s so darn easy that you won’t have any issues getting it on the table on a busy night.
Plus, the quick homemade fall salad dressing doesn’t contain weird, unpronounceable ingredients. It also uses extra virgin olive oil as the fat.
You can feel good about this delicious fall apple salad!
Ingredients
Buy a 5-ounce clamshell container of mixed spring greens in the produce section. Keep it easy!
You’re looking for baked apple cinnamon chips with only 2 ingredients: apples and cinnamon. I like the bare brand.
You’ll need shredded cheddar cheese. I like to shred the cheddar by hand, but you can use pre-shredded to save time.
If you’re starting with whole or halved pecans, chop them into pieces. But I always keep a bag of pecan pieces on hand for a quick addition to salads.
Homemade apple cider vinaigrette is super quick and easy! Combine apple cider vinegar, Dijon mustard, sugar, onion powder, garlic powder, and salt. Then, whisk in extra virgin olive oil for a wholesome dressing that brings home the apple flavor.
How to Make it
First, make the dressing. Add all the dressing ingredients except the olive oil to a small jar and whisk to combine.
Then, slowly whisk in the extra virgin olive oil until a smooth dressing forms. Set it aside and start building the salad.
Arrange the mixed greens on a platter or in individual bowls. Then, top with the pecans and shredded cheddar.
Drizzle the dressing evenly over the salad and top with the apple chips.
Serve immediately.
