Rossini (Strawberry and Prosecco Cocktail)

This Rossini cocktail combines sparkling prosecco and sweet strawberry puree to make a drink perfect for brunch or special occasions!

A Rossini cocktail is the perfect drink for a special occasion. Make this bubbly cocktail in the late spring and early summer when fresh strawberries are in season. 

What is a Rossini Cocktail?

A Rossini falls into the category of champagne cocktails, like the classic champagne cocktail or my flirty love potion cocktail. It’s a variation of the classic Bellini that uses strawberry puree instead of peach.

Ingredients

A bottle of prosecco, a jar of homemade strawberry puree, and a few fresh strawberries.

Homemade Strawberry Puree is super easy to make with fresh strawberries, sugar, and lemon juice. Make sure to make the puree before you get ready to make the cocktails. Here is the link for the strawberry puree recipe.

Chilled Italian Prosecco is a sweet sparkling wine. If you want to use a substitution see the suggestions below.

Substitutions

  • Make it a mocktail: replace the prosecco with sparkling white grape juice.
  • Use any sweet sparking wine in place of prosecco.

Instructions

Make a batch of homemade strawberry puree if you don’t already have it.

Chill the prosecco and strawberry puree before making the cocktail.

Pour the chilled strawberry puree in the bottom of a champagne flute or coupe glass.

Slowly pour the chilled prosecco in the glass while gently stirring to combine. It will be fizzy!

Garnish with a fresh strawberry and serve immediately.

Serving Tips

You can serve a Rossini Cocktail for any special occasion you would open a bottle of bubbly. But it’s light enough to serve any time.

Serve them at brunch, as an afternoon spritz, during cocktail hour, or as after-dinner drinks.

These are perfect for Mother’s Day brunch or Easter brunch.

  1. Pour the strawberry puree into the bottom of a champagne flute or coupe glass. Slowly pour in the chilled prosecco while gently stirring to combine. It will be fizzy.
  2. Cut a slit into the bottom of a fresh strawberry and place it on the rim of the glass to garnish.

Serve immediately.
