Make the dressing: Add the apple cider vinegar, dijon mustard, sugar, onion powder, garlic powder, and salt to a small jar and whisk to combine. Slowly whisk in the extra virgin olive oil until a smooth dressing forms.
Arrange the mixed greens on a platter or in individual bowls. Top with the shredded cheddar and pecan pieces.
Whisk the dressing to recombine and drizzle it evenly over the salad.
Top with the apple cinnamon chips and serve immediately.

Buy pre-chopped pecan pieces to save time.
Look for baked apple chips that only contain apples and cinnamon. I like the Bare brand.
