These mini pancake bites are packed with protein. Keep them classic, or add your favorite toppings!

For the pancake bites

  • 3/4 cup whole milk
  • 1 egg
  • 1 tablespoon melted butter or vegetable oil
  • 1 tablespoon sugar
  • 1 cup Kodiak Cakes Buttermilk Flapjack and Waffle Mix*

Optional toppings (choose 1 or mix and match)

  • 1/2 cup blueberries
  • 1/2 cup mini chocolate chips
  • 1/4 cup brown sugar mixed with 1/2 teaspoon cinnamon
  • 1/2 cup strawberry or raspberry preserves

Instructions

Preheat the oven to 350℉.

  1. Lightly grease a 24-count mini muffin pan. Or, use a silicone mini muffin pan placed on a sheet pan.
  2. Measure the milk into a measuring cup, crack the egg into the milk, pour in the melted butter, add the sugar, and whisk until smooth.
  3. Add the dry flapjack mix to a mixing bowl and form a well into the center.
  4. Pour the milk and egg mixture slowly into the well and mix to combine. Do not overmix.
  5. Spoon the mixture into the prepared mini muffin pan.
  6. Sprinkle toppings on each pancake bite if desired.
  7. Bake at 350℉ for about 12 minutes, until a knife or toothpick inserted into the center of a pancake bite comes out clean.
  8. Remove from the oven and serve warm, with syrup if desired. If you plan to save them for later, remove them from the pan and cool on a cooling rack.
