This creamy, plant-based dressing only has 5 main ingredients. And it’s dairy-free, gluten-free, and vegetarian. A simple swap of maple syrup instead of the local honey will make it vegan. It is made with simple ingredients and has no fillers like soybean oil or refined sugar. It’s so quick and easy that you’ll never think about store-bought again!
I love making this in the fall. Don’t stand over the stove for hours. Make a quick and healthy kale salad with this tahini dressing, and use that free time to play outside!
Ingredients
Tahini is a paste made from ground sesame seeds. It has a nutty, earthy flavor. It’s a must in homemade hummus. It makes this dressing smooth and creamy without using dairy. Be sure to get a good quality tahini. The best I’ve found is Baron’s Pure Sesame Tahini Paste. Tahini is usually in the peanut butter aisle at the grocery store. If you have trouble finding it, you can order it online.
Fresh lemon juice adds a bright and fresh flavor. It is so much better than the bottled stuff. It takes the place of vinegar as the liquid in this dressing.
Honey adds a hint of sweetness and balances the bitter and earthy flavors of the tahini. Use high-quality pure honey for this dressing, preferably from a local source.
Fresh garlic adds a bold flavor and a hint of spice to the dressing.
Extra virgin olive oil helps thin the tahini and turn it into a pourable dressing.

How to Make it
Use a knife to finely mince the garlic. Then juice the lemon with a citrus squeezer.
Add all ingredients to an 8-ounce jelly jar and shake until a smooth dressing forms.

Sometimes tahini will separate in the jar. The ground sesame solids will separate from the sesame oil. If this happens, first try stirring it to mix it back together. It’s easier to do at room temperature. If this doesn’t work, scrape out the tahini and use an immersion blender or a blender to blend it until smooth.
Or, you can make this tahini dressing in a blender using the thick part of the paste and the separated oil.
Add 1 tablespoon of cold water to the jar of tahini dressing. Close the lid and shake it until it is smooth.
