Tokyo Sunset Cocktail

This easy summer cocktail has a beautiful sunset color. It’s inspired by a cocktail served at Epcot!

Ingredients

Units Scale

1 cocktail

  • 2 ounces coconut rum
  • 2 ounces orange juice
  • 2 ounces pineapple juice
  • 1/4 ounce grenadine (a splash)
  • Orange slice and a cocktail cherry for garnish

2-quart pitcher

  • 2 2/3 cups orange juice
  • 2 2/3 cups pineapple juice
  • 2 2/3 cups coconut rum
  • About 1/3 cup of grenadine
  • 1 orange, cut in half, then sliced for garnish
  • Maraschino cherries, for garnish

Instructions

For 1 cocktail

  1. Fill a cocktail shaker half full of ice. Add the rum, orange juice, and pineapple juice. Close the lid and shake vigorously for 20 seconds to mix and chill the cocktail.
  2. Pour into a tall glass filled with ice.
  3. Add a splash of grenadine to the top of the cocktail. DO NOT STIR.
  4. Garnish with an orange slice and a cocktail cherry.
  5. Serve immediately.

For a pitcher

  1. Mix the rum, pineapple, and orange juice in a pitcher. Chill until ready to serve.
  2. Pour into an ice-filled glass.
  3. Then, top with a splash of grenadine. DO NOT STIR.
  4. Garnish with an orange slice and a cocktail cherry.
  5. Serve immediately.
