Greek Chicken Souvlaki (Grilled Chicken Kebabs)

Marinated and grilled Greek chicken kebabs are perfect with pita, cucumbers, tomatoes, onions, and tzatziki sauce.

Ingredients

  • 2 pounds boneless skinless breasts

Marinade

  • Juice of 1 lemon
  • 1/2 cup olive oil
  • 4 cloves of garlic, crushed and peeled
  • 1 tablespoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Combine the ingredients for the marinade directly in the container you plan to marinate in. A gallon-sized zipper bag works great.
  2. Cut the chicken breasts into 1.5-inch chunks. Try to cut them into uniform-sized pieces so they cook evenly.  
  3. Submerge the chicken pieces in the marinade for at least 2 hours. They can be marinated for up to 12 hours. 
  4. If using bamboo skewers, soak them in water for 30 minutes before assembling the skewers.
  5. After the chicken marinates, spear the chicken pieces onto 6 bamboo or metal skewers. Discard the leftover marinade.
  6. Clean and oil your grill grates. Then, light a charcoal grill or heat a propane grill to medium heat.
  7. Grill the chicken souvlaki skewers for 4 minutes, then turn and grill for 4 more minutes. Continue turning every 2 minutes until the chicken reaches an internal temperature of 165℉. It should take 10-12 minutes in total.

Notes

  • Keep the grill lid closed while grilling the chicken.
