Shamrock Smoothie (Vanilla & Mint)

A vanilla mint shamrock smoothie with whipped cream and a cherry on top.

This ultra-creamy vanilla mint smoothie is packed with protein and fiber. If you’re craving a milkshake, try this!

Ingredients

  • 2 cups baby spinach
  • 1/2 cup whole milk
  • 1/2 cup full-fat vanilla Greek yogurt
  • 1 frozen banana
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon peppermint extract
  • 1/2 cup ice (optional)

Instructions

  1. Add the baby spinach and whole milk to the blender and blend until the spinach is smooth. 
  2. Add the remaining ingredients and blend until smooth.

Notes

Optional Add-ins

  • Top with homemade whipped cream and a cherry.
  • Add a scoop of collagen protein powder for extra protein. Add it with the spinach to make sure it blends up smoothly. I like pure, unflavored collagen peptides from Vital Proteins.
  • It’s important to use whole milk and full-fat Greek yogurt to make this smoothie creamy.
  • Add ice for a more frozen consistency.

Tips

  • Measure the vanilla and peppermint extract. A little goes a long way, especially for the peppermint.
