Pimento Cheese (without cream cheese)

Homemade southern style pimento cheese made in minutes.

Ingredients

  • 16 oz block extra sharp cheddar cheese
  • 3/4 cup mayonnaise
  • 3/4 teaspoon paprika
  • 1/8 teaspoon cayenne pepper
  • 1/2 teaspoon fresh ground black pepper
  • 1/2 teaspoon kosher salt
  • 12 oz jar roasted red peppers, drained and diced

Instructions

  1. Shred the sharp cheddar in a food processor or with the large shredding holes on a box grater and set it aside.
  2. Add all ingredients except the cheese to a large mixing bowl.
  3. Stir until well combined.
  4. Add the shredded sharp cheddar and stir until everything is mixed together.

Notes

  • If it’s too dry, stir in more mayonnaise, 1 tablespoon at a time, until it reaches your preferred consistency.
  • Make it spicy by adding a diced fresh jalapeno.
  • Store in an airtight container in the fridge for up to 10 days.
