Juicy heirloom tomatoes, creamy mozzarella, aromatic fresh basil, and extra virgin olive oil create a beautiful summer caprese salad that’s bursting with flavor.

Ingredients

  • 3 large heirloom tomatoes, preferably different colors
  • 12 ounces fresh mozzarella
  • 1/2 cup fresh basil leaves
  • 1/4 cup extra virgin olive oil
  • Sea salt flakes or kosher salt to taste

Instructions

  1. Cut the tomatoes into thick slices and cut the mozzarella a little thinner (about ¼ inch thick).
  2. Arrange the tomato and mozzarella slices on a platter. Alternate them and overlap them slightly.
  3. Tear the basil leaves into pieces and arrange them on top of the tomatoes and mozzarella. Make sure to tuck some pieces of basil into the overlapping tomatoes and mozzarella.
  4. Drizzle extra virgin olive oil over the salad.
  5. Sprinkle it with salt and serve immediately.

Notes

Try these variations

  • Burrata Caprese: Use creamy burrata cheese in place of the mozzarella and tear it instead of slicing. 
  • Buffalo Mozzarella Caprese: Slice 12 ounces of buffalo mozzarella in place of the regular mozzarella.
  • Vegan Caprese: Swap the mozzarella for a vegan mozzarella, such as cashew milk mozzarella.
  • Add pesto: Drizzle it with pesto after assembly.
  • Add balsamic glaze: Top it off with a swirl of balsamic glaze
