Ham and Cheese Frittata

This 5-ingredient ham and cheese frittata is the perfect way to use holiday leftovers or deli ham.  

Ingredients

  • 8 eggs
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons + 1 tablespoon butter, divided
  • 1/2 of an onion, peeled and diced
  • 1 cup ham, diced*
  • 1 cup shredded Swiss cheese
  • Chives or green onions for garnish (optional)

Instructions

  1. Preheat the oven to 350℉.
  2. Whisk the eggs, salt, and pepper in a bowl until the eggs are well-mixed and frothy. Set aside.
  3. Melt the butter in a 10-inch cast iron skillet over medium heat. Add the diced onions and cook until they are soft and translucent. Add the diced ham and continue cooking to warm the ham.
  4. Scrape the ham and onions into the egg mixture. Then add the cheese and stir to combine.
  5. You don’t need to wash the pan. Just return it to the stove over medium heat.
  6. Add the other tablespoon of butter to the pan and swirl it around to melt and coat the pan.
  7. Pour the egg mixture into the hot pan.  Then, use a spatula to gently nudge the egg mixture and evenly distribute the toppings. Cook over medium heat without stirring until the eggs are set around the edges, about 5 minutes.
  8. Use oven mitts to carefully transfer the pan to the oven without disturbing the eggs. Bake at 350℉ for 8-10 minutes, until the eggs are puffy and set in the middle.
  9. Remove from the oven and cool slightly.
  10. Run a butter knife along the edges to loosen the frittata from the pan. 
  11. Serve it from the pan or carefully transfer it to a large plate.  Then, slice and serve.

Notes

  • Use leftover ham from a holiday ham, or dice some sliced deli ham.*
  • Makes excellent leftovers. They’re good hot, cold, or room temperature.
  • Store leftovers in the fridge for up to 3 days. Or freeze for up to 3 months.
  • Use a 10-inch cast iron skillet or an oven-safe nonstick pan. If you use a smaller skillet, the frittata will be thicker and may take longer to set. If you use a larger skillet, it will be thinner and take less time to set. 10 inches is the sweet spot.
