This easy bean salad is perfect for weekly meal prep.

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1 can cannellini beans, rinsed and drained
  • 2 bell peppers, diced
  • 1 English cucumber, diced
  • 1 red onion, diced
  • 1 cup chopped parsley
  • 1/4 cup extra virgin olive oil
  • 1/2 cup red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Prepare the beans and vegetables.
  2. Add the extra virgin olive oil, red wine vinegar, Dijon mustard, salt, and pepper to a large mixing bowl. Whisk until combined.
  3. Add the vegetables and toss to coat.

Serve or refrigerate until ready to eat.
