Easy 3 Cheese Baked Ziti (Meatless)

This cheesy, saucy meatless baked ziti is comforting and delicious.

Ingredients

  • 16-ounce box of dried ziti (or penne)
  • 1 tablespoon of salt for the pasta cooking water
  • 1 egg
  • 15 ounces of ricotta cheese
  • 3/4 cup shredded parmesan, divided
  • 2 cups shredded mozzarella, divided
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 2 24ounce jars of your favorite tomato-based pasta sauce, divided

Instructions

  1. Preheat the oven to 350℉.
  2. Cook the ziti to al dente in salted boiling water. Drain. Do not rinse
  3. While the ziti is boiling: Add the egg to a very large mixing bowl and lightly beat. Add the ricotta, ¼ cup of grated parmesan, 1 cup of shredded mozzarella, Italian seasoning, garlic, and ½ teaspoon of salt. Stir to combine. 
  4. Add 1 jar of pasta sauce and stir to combine. Then, stir in the cooked and drained ziti noodles.
  5. Spread the mixture into a 9×13 baking dish. 
  6. Pour the remaining jar of sauce over the noodles. 
  7. Then, top with the remaining mozzarella and parmesan cheese. 
  8. Bake uncovered at 350℉ for 30 minutes, until bubbly and golden.

Notes

Make it extra cheesy: Add an extra cup of shredded mozzarella to the top before making.

Make ahead: Make the day before, cover with foil, and refrigerate. Cook for 30 minutes covered. Remove foil and continue cooking uncovered for 15 minutes.

Freeze: In a disposable aluminum baking pan. Place on a baking sheet and Cook for 1 hour 15 minutes covered. Remove foil and continue cooking uncovered for 15 minutes. Or, thaw overnight and follow the cooking from refrigerated instructions.
