This creamy cucumber salad has only 5 ingredients and is ready in less than 10 minutes!

- 1 pound thin-skinned cucumbers (English or Persian varieties work best)
- 1/2 of a sweet onion (preferably Vidalia)
- 1/2 cup sour cream
- 1 tablespoon lemon juice
- 1 tablespoon fresh or freeze-dried dill
- 1/2 teaspoon Salt
- 1/2 teaspoon Pepper
- Slice the cucumbers into rounds about ¼ inch thick. Do not peel them!
- Peel the onion half and thinly slice it.
- Mix all ingredients together in a large bowl and serve.
Notes
- Serve immediately. If it sits too long, the cucumbers start to release water.
- You can use Greek yogurt instead of sour cream for a higher protein option.
