Blueberry Mini Pie Pops

First, gather your ingredients.

Blueberries

Pie Dough

Sprinkles

Cornstarch

Vanilla

Milk

Powdered Sugar

Sugar

Lemon juice

Cinnamon

Egg

Lollipop sticks

Make the pie filling by cooking blueberries, sugar, cornstarch, lemon juice, and cinnamon.

The sugar will start to melt and the blueberries will release their juice.

Stir and cook until it reaches a simmer.

Turn down the heat and continue cooking. The pie filling will thicken.

Remove the blueberry pie filling from the heat and let it cool.

Meanwhile, it's time to roll out the pie dough and cut it into stars!

Press a lollipop stick into a cutout of pie dough and add a heaping teaspoon of pie filling to the middle.

Place the top on. Then crimp and seal the edges with a fork. Brush them with egg wash and bake.

Prepare a vanilla glaze while the blueberry mini pie pops are in the oven.

Remove the pies from the oven and let them cool.

Drizzle them with glaze.

Decorate with sprinkles and enjoy!
